A Super Moist Banana Bread


Now that the price of banana is back to normal (last seen at woolies at 99c/kg) so what best way to enjoy this humble yet very nutritious fruit than to make some nice yummy things with it ... just like what I did this afternoon - made the most moist banana bread ever.


Ingredients:
2 cups plain flour
1 tsp baking soda
1/2 tsp baking powder
1/2 cup butter (115g)
1 cup sugar
1/2 tsp salt
2 eggs
1 tsp vanilla extract
4 tbsp sour cream
4 large overripe bananas

To Make:
Preheat oven to 350F (180C)
Sift and mix all dry ingredients (excluding the sugar)
Cream the butter then gradually add the sugar until they are pale and fluffy
Mix in the eggs (one at a time), then the vanilla extract then the sour cream until well blended
Remove from the mixer then fold the flour to the butter mixture
Once the flour is mixed through, add the mashed bananas
Place in a baking pan and bake for 45 minutes or when the toothpick comes out clean when you poke it in the middle


After removing from the oven, let it cool down in a wire rack.
Slice and enjoy.  I smeared some cream cheese to the kid's little slices but it is yummy on its own and it was really so soft and moist and I am sure you will enjoy it with some hot coffee or hot chocolate.
