Baking Time: Cookies & Cream Cupcake

Finally, I was able to bring out my baking gadgets to make something that I learned from blog hopping. I saw this enticing cupcake recipe here and as usual I vowed to myself that I will make some time to try this. So despite having a hyper active toddler, I managed to make it this afternoon while my little princess was having her nap.

Here is how it was made ... I just copied this from cafemunchkin's site

YOU WILL NEED THE FOLLOWING:

2 1/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt1
2/3 cups sugar1 cup milk
1/2 cup (1 stick) butter, softened
2 teaspoons vanilla
3 egg whites
1 cup crushed chocolate sandwich cookies -- but I think I got over excited and placed more than what was required....
HOW TO:

1. Preheat oven to 350F. Lightly grease 24 standard muffin tin.
2. Sift flour, baking powder and salt together in a bowl (of electric stand mixer).
Stir in sugar. Add milk, butter and vanilla; mix at low speed for 30 seconds. Stop and scrape bowl. Beat at medium speed for 2 minutes. Add egg whites; beat 2 minutes more. Stir in 1 cup crushed cookies. Spoon batter into prepared muffin cups, filling two-thirds full.
3. Bake 15-20 minutes (as per my experience, but 20-25 minutes as per the recipe book) or until toothpick inserted into centers come out clean. Cool in pans on wire racks 10 minutes. Remove cupcakes to racks; cool completely.


I didn't had the chance to put frosting on them as my little man was ready to munch on them and as you can see in here, it seemed that he was enjoying his snackie that mummy made.



It is so easy to make yet its so yummy to the tummy... littlemissy was already reserving some for lunchbox on Monday... but hopefully there would be some left after we have this with our coffee with Mr K. Try this simple cupcake recipe and let me know how you go... you can also replace the chocolate cookies with whatever you have in your cupboard .... let your taste buds lead you to what you want... I am already thinking of making some lemon cupcake as we have heaps of lemon in the fridge .....
